Abstract
This thesis is composed of a literature review of recent studies detailing a typical college student’s diet and ability to purchase, prepare, and consume a nutritional diet; an observational case study of 10 college student’s eating habits over a seven-day field trip; and a one month feasibility study conducted by the author to demonstrate a nutrient-rich monthly student diet for $200 USD. The challenges of eating healthy that are specific to the college student and tools to overcome them are highlighted by using United States Department of Agriculture recommendations and the study findings. The thesis provides a practical approach to a healthy lifestyle for college students.
