Abstract
When you think of flavors and fragrances you most likely think about your favorite food, perfume, or the smell of a childhood experience. The science of flavors and fragrances is rooted across multiple disciplines of science such as chemistry, biology, physics, and neuroscience. Yet, with all these complexities students are interacting with this science every day. Therefore, we have developed laboratory exercises that combine the sense of smell to actual laboratory experiments and the use of analytical instrumentation. Initial feedback has been positive, and we are expanding this approach at EKU.
